
Christmas time always makes me do all kinds of baking! This treat I just can’t help but to make because it is just too delicious. I often make this for a gift for our teachers/ bus drivers/ Sunday school teachers. This is a perfect gift because it’s easy, delicious and inexpensive.
I do have one disclaimer on this recipe. Be careful, once you take one bite you won’t be able to stop!! Sure to become a Christmas classic and family favourite.
Tips & Tricks
- I use a large Tupperware plastic bowl with lid that I got from my Mother-in-law. I have used this bowl so much! If you don’t have one you must dive in! This bowl is the best because its big enough for both cereal boxes, afterward you are able to microwave and shake it up in the same bowl
- On countertop lay out two large pieces of parchment paper to let the caramel Chex cool off then afterward you may have to break it apart a bit
- Crispix cereal also works for this, I know around the holidays I have found that the store gets sold out of Chex!
Storage
Store in an airtight container for up to two weeks room temprature
How to Make
Step one- Melt your butter in a sauce pan

Step Two- Add brown sugar and syrup and bring to a boil over medium-high heat, continue to stir/whisk continually

Step Three- Once it has begun to boil let it stay on the stove for about 30 seconds boiling add the vanilla and baking soda

Step Four- Pour your cereal into a large bowl and pour your mixture on top and mix it in

Step Five- Place your lid on your bowl and microwave for two minutes then shake
Step Six- Microwave another two minutes and then shake once more

Step Seven- Place two large pieces of parchment paper down and spread your mixture and let it cool


Caramel Chex
Ingredients
- 2 Small boxes Chex Cereal
- 2 Cups Butter
- 2 Cups Brown Sugar
- 1/2 Cup Corn Syrup
- 1/2 Teaspoon Vanilla
- 1/2 Teaspoon Baking Soda
Instructions
- Melt the butter in a saucepan
- Add brown sugar and syrup bring to a boil over medium heat
- Add vanilla and baking soda
- Place cereal in large bowl and pour mixture on top
- Cover bowl, microwave for two minutes then shake
- Microwave again for two minutes and shake
- Spread mixture onto parchment paper and let cool
