Isn’t it the worst, everyone is ready to eat the big meal and you are standing over the stove mashing your potatoes! This recipe has been a life saver. I have used this over and over, from holidays to seeding and harvest meals at the farm. Make ahead loaded mashed potato casserole will make your life so much easier on those busy meal days. Also, who doesn’t love a side dish covered with bacon and cheese??

Tips & Tricks

  • Bacon! My favorite new hack is freezing mass amounts of bacon bits . My son had a bacon fundraiser for hockey and I used a whole 11 lbs box of bacon and sliced it into bacon bits and froze. Then anytime you need to elevate a side dish or salad you can in a flash without having to cook bacon and make a huge mess.
  • For those extra busy times I like to make this dish ahead of time and freeze it. Take it out and let it thaw and cook and its delicious. A good recipe to double up to save one for freezer.

How to Make

Step One- peel and cut potatoes into cubes, place in your large pot and cover with water and add a bit of salt

Step Two- Bring to a boil, reduce heat to medium and let cook for 10-15 minutes or until you are able to easily poke a fork through your potato

Step Three- Drain potatoes and then add in your tasty extras! Butter, cream, sour cream, cream cheese/ Mash them up

Step Four- Butter a 9×13 baking dish, fill with your potatoes and flatten out with spatula

Step Five- Top with your bacon bits, cheese and chives

Step Six- Bake at 350 for 45 minutes and enjoy!

Make Ahead Loaded Mashed Potato Casserole

An easy creamy delicious loaded mashed potato dish easy to prepare ahead of time

  • 1 block Cream Cheese
  • ½ cup Butter
  • ½ cup Whole Cream
  • ½ cup Sour Cream
  • 6 Large Russet Potatoes
  • ½ Teaspoon Salt
  • 6 Slices Bacon
  • ½ Cup Cheddar Cheese
  • 3 Chives


  • Preheat oven to 350°
  • Peel potatoes and cut into cubes, place in large pot and cover with water and ½ teaspoon of salt.
  • Bring water and potatoes to a boil. Once they have hit a boil reduce heat to medium heat and cook for 10-15 minutes or until you can insert fork easily into potato
  • While cooking potatoes chop bacon into pieces and fry up
  • Drain water from potatoes
  • Add in the cream, butter, cream cheese and sour cream and mash potatoes and ingredients all together
  • Butter a 9×13 baking dish and fill with Mashed potatoes
  • Top with bacon bits, cheese and chopped chives
  • Place baking dish in preheated oven and cook for 45 minutes
